The total estate of Chateau du Seuil encompasses 25 hectares including 15 hectares in the Graves appellation and 10 hectares in the Premières Côtes de Bordeaux appellation.The Graves appellation vines are located mainly around the château, the village of Cerons itself and the nearby area called 'Le plateau des Moulin's a vent'.
The Premières Côtes de Bordeaux vineyards are located on the right bank of the Garonne from the château on the south-east facing slope overlooking the medieval village of Rions.
Average vine age across the whole estate is approximately 25 years. Over the last 14 years a major effort has been made to increase vine density across the whole estate and reduce overall harvest yields to assist in achieving consistent ripening. Methods of crop selection prior to picking and 'triage' post harvest have been introduced, selecting only the healthiest, ripest grapes.
Preference is given to organic cultivation techniques where practicable in the vineyards, and mechanical, rather than chemical treatment of the soil with the objective of achieving a healthy vineyard at the same time minimising the impact on the environment.
A modern winery was built in 1989, designed to blend in perfectly with the surrounding vineyards and park. It houses the temperature-controlled stainless steel tanks, providing ideal conditions for fermentation and is adjacent to the barrel store which is air conditioned. Technology in the winery is consistently upgraded to ensure the primary objective of enhancing wine quality is achieved.
Use is made of the best in traditional winemaking methods coupled with the advantages of modern technologies and temperature control during vinification. The 'Oxoline system' is used for barrel fermentation of both reds and whites.
